The tour of the oyster-farming adventure begins at the port of Château-d'Oléron, a major oyster transit center, which found its current location in 1790. Many oyster huts were built along the marsh channels. Some of them have been converted into artists' studios.
In others, oyster farming continues.
Walking along the coastal path, you'll skirt the sea for 2 km between the Port du Château and the village of Ors. There are a few benches along the way. Stop and admire the foreshore at low tide, or the gentle lapping of the sea at high tide. Changing colors, a moment of relaxation for some, or a sporty trail for walkers. There's something for everyone.
The trail continues along the Ors channel, with its multicolored cabins. Over 1.5 km long, this is the longest oyster-farming channel and one of the most beautiful on the Ile d'Oléron.
Numerous oyster beds have been built on the site of former salt marshes, forming a veritable mosaic of land and water. In these basins (or "claires"), the oysters fatten and acquire a unique hue and taste through the action of a microscopic algae, the blue navicula.
More than 100 companies make their living from this activity, most of them located in the port and on the Ors channel.
